Berry Tea Cakes

Warm up that oven, creatives! If you’re in need of a treat for a tea party or picnic spread, try our delightful Berry Tea Cakes. Topped with cream and raspberry, these are sure to be a hit!

Ingredients:

  • 7 tbsp. butter

  • 1/4 cup powdered sugar

  • 1/2 cup almond flour

  • 3 tsbp. flour

  • 1/4 cup egg whites

  • orange (for zesting)

  • 1 tsp. vanilla extract

  • blueberries

Instructions:

  1. Brown your butter in a pan on medium low heat for 6 minutes. Allow to cool to room temperature.

  2. Sift powdered sugar, almond flour, and all-purpose flour. Mix together, then mix in egg whites.

  3. In a small cup or bowl, shave the skin of your orange with a microplane until you have about 2 tsp. of zest.

  4. Add orange zest and vanilla into your dry mix, then add your browned butter.

  5. Combine everything together until well-mixed.

  6. Preheat oven to 400°F or 200°C.

  7. In a muffin tray or standalone muffin liners, spoon out an even amount into each cup. Afterward, drop a few blueberries into every one!

  8. Bake at 400°F for 3 minutes, then lower to 375°F (or 190°C) for 8-9 minutes.

  9. Allow muffins to cool; once cooled, top with fruits, nuts, cream, or anything you can dream of.

  10. Voila! You’ve made Berry Tea Cakes!
