Berry Tea Cakes

Ingredients:
7 tbsp. butter
1/4 cup powdered sugar
1/2 cup almond flour
3 tsbp. flour
1/4 cup egg whites
orange (for zesting)
1 tsp. vanilla extract
blueberries
Instructions:
Brown your butter in a pan on medium low heat for 6 minutes. Allow to cool to room temperature.
Sift powdered sugar, almond flour, and all-purpose flour. Mix together, then mix in egg whites.
In a small cup or bowl, shave the skin of your orange with a microplane until you have about 2 tsp. of zest.
Add orange zest and vanilla into your dry mix, then add your browned butter.
Combine everything together until well-mixed.
Preheat oven to 400°F or 200°C.
In a muffin tray or standalone muffin liners, spoon out an even amount into each cup. Afterward, drop a few blueberries into every one!
Bake at 400°F for 3 minutes, then lower to 375°F (or 190°C) for 8-9 minutes.
Allow muffins to cool; once cooled, top with fruits, nuts, cream, or anything you can dream of.
