Miffy Banana Pancakes

Miffy’s back and made out of banana! Today, we have a recipe for Miffy Banana Pancakes topped on fruit salad. This two ingredient pancake batter is healthy and just as tasty as your regular pancake or crepe! Perfect as a brunch dish or as a snack throughout the day to keep you energized.

Ingredients:

  • 1 banana

  • 2 eggs

  • fruits of choice

  • chocolate melts

Instructions:

  1. In a bowl, peel and mash up your ripe banana with a fork.

  2. Add in your eggs and beat until well-combined.

  3. With your batter, pour a bunny-shaped head directly in your pan, either freehand or using a bunny cookie cutter and piping bag.

  4. Cook until lightly golden brown

    • Because this batter is only two ingredients, it will be thin and a bit liquidy! Keep them on a lower heat and do your best to not let these pancakes burn by watching them. Ideally, they will only need a minute or two on each side.

  5. While the pancakes are cooling, cut up your fruit! Create a pile of multi-colored fruit that Miffy will stand out on.

  6. Fill a small cup with chocolate melts and microwave until melted. Then use a toothpick or small piping bag to add Miffy’s eyes and mouth in chocolate.

  7. Voila! You’ve made your own Miffy Banana Pancakes!
