Lemon Bar Cookies

Let’s get cozy and bake something lovely! Today, we have these delicious Lemon Bar Cookies to share with you. Mixed with all the tastes of summer sweetness, these cookies are made out of an Earl Gray sugar cookie base with fresh lemon filling in the center.

Ingredients:

  • 1/2 cup butter

  • 2 eggs

  • 3/4 cup sugar

  • 1 tsp. baking powder

  • 1 1/2 cup flour

  • 1/2 tsp. corn starch

  • 1 tsp. vanilla extract

  • 1 lemon (for zest)

  • 2 packets of earl gray tea

Instructions:

  1. Leave butter out to soften.

  2. Preheat oven to 350°F or 175°C.

  3. Cream together softened butter and 1/2 cup of sugar to make a frosting-like mixture; then add one egg and your vanilla.

  4. In a separate bowl, combine your flour, baking powder, and earl gray tea. Fold this into your wet mixture; once you have a dough-like consistency, form into a ball and roll out evenly. Place to the side.

  5. Using a microplane, grate the skin of your lemon until you get about a handful of zest.

  6. In a separate pot, add the rest of your sugar (1/4 cup), one egg, corn starch, and the handful of lemon zest. Mix all together.

  7. On the stovetop, cook mixture on low until thickened.

  8. On a baking sheet lined with parchment, roll out and plop down small circle from your cookie dough.

  9. Use the back of a spoon to create shallow divots in the middle of each cookie. Then fill with your lemon mixture.

  10. Bake for ~10 minutes.

  11. Transfer cookies to wire rack and allow to cool.

    • (Optional) Once cool, lightly cover the cookies in a dusting of powdered sugar.

  12. Voila! You’ve made your very own Lemon Bar Cookies!
