Mango Chia Rose

Happy spring, creatives! It’s the perfect time of year for a taste of our delicious Mango Chia Rose dessert. Similar to a parfait, this dish is deceptively simple to make and uses layers to create a decadent, textured treat.

Ingredients:

  • 1/2 cup of coconut milk

  • 2 tbsp. of chia seeds

  • 1 tsp. of honey

  • 1 mango

Instructions:

  1. In a small cup or bowl, measure out chia seeds.

  2. Add in coconut milk and honey.

  3. Mix all ingredients together, then let sit in the fridge to thicken for 1-2 hours.

  4. While your chia pudding is in the fridge, grab your mango and cut it in half. Take one half and cut several thin strips, about half an inch thick each. Put to the side.

  5. Slice and cube the leftover mango half. Put to the side.

  6. Once your chia mixture is chilled and thickened, spoon out 2-3 tbsp. of the pudding into the bottom of a serving glass.

  7. On top of this layer, place several mango cubes.

  8. Fill the remaining space in your glass with chia pudding, leaving a centimeter or two of space at the top.

  9. Now’s the fun part! Lay out your mango slices around the rim of your glass, starting with the longest pieces. Curve them inward, making a U shape with each piece. As you go along and build up the outer petals of the rose, place the shorter slices in the center.

  10. (Optional) Add a sweet little bow to the stem of your glass for a bit of flair.

  11. Voila! You’ve made your very own Mango Chia Rose!
